How many of you are planning to cook beans to share with your valentine? I am, with Mole Poblano, chocolate included.
Happy Valentine’s Day!

Mole Poblano over Black Beans
adapted from The Mexican Cook Book by George and Inger Wallace
Traditionally this sauce is served with turkey and chicken.
serves 10-12
3 garlic cloves
1 medium onion, sliced
3 tablespoons of Masa Harina
1/4 cup raisins
1/4 cup of almond meal
1 tablespoon of sesame seeds
1 tablespoon of parsley
1 1/2 cups of tomatoes, crushed
2 tablespoons of olive oil
7 tablespoons of chile powder, about 2 ounces (mulato, ancho peppers)
1/4 teaspoon each: cumin, cloves, cinnamon, coriander seeds, anise star
3/4 teaspoon salt
3 heaping tablespoons unsweetened cocoa powder
3 cups water

Blend all ingredients in the blender until smooth. Place the sauce in a pot and bring to a gentle boil, simmer for about 15-20 minutes, stirring to prevent burning until thick. Add more water to desired consistence.
