Curried Lentils

Thanks Meegan Finnegan for sharing your curried lentils recipe (via Mark Bittman cookbook). Hearty and perfectly paired with Nancy Weber salad to receive meetings goers today at The Sanctuary for Independent Media in preparation for “Found Art in North Troy.”
The Sanctuary announced their first event of Spring 2013 season: Zimbabwean superstar Oliver Mtukudzi and The Black Spirits on April 3 at 7 PM!

Curried Lentils adapted from Meegan’s recipe
3 cup green lentils
2 cup coconut milk
5 cups water
2 tablespoons curry powder
4 red potatoes, diced
1 large bunch of cilantro, chopped
1/2 teaspoon of hot sauce
Juice of 2 limes
Boil the lentils with the coconut milk, water and curry power for about 15 minutes, add potato and simmer until done (adding water or broth as needed) stir in chopped cilantro at the end and squeeze lime juice on to eat!
