To my oldest daughter: bean soup
To the youngest: tomato soup
To hubby: it has a whole onion and garlic.
Tomato Bean Soup
1 medium onion, chopped
2 TBSP olive oil
2 cups of crushed tomatoes
1 1/2 cups of pinto beans
3 cloves garlic, sliced
2 TBSP lemon juice
1 TBSP soy sauce
1/2 tsp dried basil
pepper to taste
To a medium sauce pan add olive oil and onions. Sauté onions until golden. Add tomatoes, beans, garlic, lemon juice, soy sauce and basil. Bring to a boil and simmer for 5-10 minutes. Blend until smooth, with immersion blender if desired.
Serve with bread or crackers and cheese.
