1/2 cup of sourdough

I love tiny food, especially if it has a pouch I can fill with secret ingredients. Today I used peach leather to fill my heart pockets. I cook, dehydrate and freeze seasonal foods as a gift to my future baking self. 

Sourdough Hand Pies 

2 ¼ cup whole wheat flour

¼ tsp salt

1 stick butter (8 tbsp)

1 egg

⅓ cup sourdough starter ( I fed mine with whey today)

1 tbsp water

Preheat oven to 400° F.

Mix the flours and salt. Rub the butter into flour using hands until the butter pieces are the size of peas. Whisk the liquids together (egg, sourdough starter and water) and add to the flour mixture. Stir the mixture together until it forms a ball. Fold to create four layers, press and roll the dough. Repeat a few times to create layers or a rough lamination.  Wrap the dough and let it chill for 1 hour. Or let it ferment for several hours on the counter and then refrigerate.

Lightly flour flat surface and roll out the dough thinly to form a large sheet and cut 24 heart shapes or twelve 5-inch circles. Place shapes on parchment-lined or baking mat baking sheets. Add a spoonful of filling of choice to the center of each hand pie. Add a top layer and crimp the edges. Brush each handpie with egg wash. Bake for 15-17 minutes or until golden brown.

Bake for 12-15 minutes. It made about 12 handpies.
