1/2 cup of sourdough

Day 13 out of 40

My mom takes pride on making fast meals. She is proud of her reputation to be able to make our everyday Brazilian meal of rice, beans, protein, cooked and raw vegetables under 30 minutes. The pressure cooker and blender are her favorite tools for speedy meals.

She didn’t make sandwich loaves of bread, but there were tapiocas (Brazilian flatbread) and blender crepes and even blender pizzas. And there was always cake. We call them “bolo” or snack cake. We eat bolo for breakfast, afternoon or bedtime snacks. Now there were a couple of master blender cake recipes she showed us, but the most important part was “add enough liquid to keep the vertex while blending” and “add a tablespoon of baking powder and you have cake.”

I had the best teacher and blender cakes are part of our weekly cooking. She always taught us to use what we have. If you have 3 eggs, great, if you have one, use one. I have watched her use tea in a recipe. if we were out of milk. She figured out a way. And cake always brightens the day. I also use what we have and make sure to finish with one tablespoon of baking powder. Here is a starting point if you would like to “blend some cake ” as mom says… I made sourdough carrot cake for tea today. Carrot cake in Brazil are frosted with chocolate if you would like them to be more of a treat.

Sourdough Carrot Blender Cake

Blend for a couple of minutes:

4 eggs

1/2 cup of fat, I used butter today

1 cup of raw sugar

1/2 cup sourdough starter from the fridge

4 medium carrots

Add to a bowl and mix:

The liquid from the blender

1 1/4 cups of whole wheat flour

1/2 tsp salt

1 tbsp baking powder

I baked 350F in muffin pans for 25-27 minutes.
