Thankful for a warm home. #mainelife #bangormaine

300g whole wheat, 300g spelt, 200g rye and 100g white all set to a good start. I was able to do some #strechandfold but I had to leave and forgot to put the dough in the fridge. When I came home, I finished with my day. Then right before bed I remembered: OHHH! (inhale for 30 seconds) THE BREAD! ( and exhale for 30 seconds). It had risen and collapsed. And why did a double the recipe? No I don't want to make crackers... So I decided to feed it! I felt a little excited to try something new. It's #sourdough . It is flour and water and #wildyeast . Maybe I can jumpstart this bread. I gave it more flour, several handfuls until it didn't look like I was pouring it, but I could shape into a round. Then I placed in the fridge for cold proof overnight. I gave it a sesame seed crust because it makes bread so delicious I could deal with the results... And for my delight, we have bread! And that's tomorrow's breakfast and I think is tasty, good-looking, made with #localflour and I am continuing to play and learn. #rethinkingperfect #realbread #storycooking #levain #fermentaçãonatural #mainefood

Last night I mixed #mondaymuffin for Tuesday breakfast. It's a little pattern my brain can remember well and it's wonderful to have for lunch boxes too. I use to meal prep Sunday afternoons, but when the weather permits, we try to go for a family walk. I used banana peels here but you can add other peels or fruit, vegetables... . This recipe makes about 2 dozen medium size muffins. And it freezes well. Add to the blender and blend for 3 minutes: 1 cup liquid (I used milk) 1/2 cup oil 1/2 cup sugar + 1/4 cup #applemollasses (or your sweetener of choice) 1 cup of #bananapeel I have been saving in my freezer. 3 eggs . In a bowl, mix : 2 cups of flour ( @mainegrains whole wheat and @auroramillsfarm spelt) 1 TBSP of baking powder 1/4 tsp baking soda 1 tsp cinnamon I added a handful of chocolate chips Or nuts or both Add blended liquids to the bowl with dry ingredients.
