Sweet Beans

The brownies looked so good after they came out of the oven, but I kept on smelling them, to make sure they did not smell like baked beans. I tried a little piece of one and then it was gone!
A couple of friends have highly recommended I try black beans brownies. I have had sweet bean desserts before, but not beans on my brownies! That’s not a combination that I would have come up on my own. I must say my family and are were surprised how good they turned out. Excited it is gluten-free. I just replaced the flour with mashed blacked beans.

Black Bean Brownie

Oven 350 F

1/2 cup butter (1 stick)
2 ounces bittersweet chocolate
1 TBSP cocoa powder
1 cup sugar
2 eggs
1/2 vanilla bean (Slit them lengthwise and scrape out the thousands of seeds.)
1 cup of mashed black beans

In a heavy bottom pan melt butter and chocolate on low fire. Turn fire off and let it cool. Stir in sugar. Add eggs, vanilla and black beans. Stir just enough to combine. Bake on 8x8x2 greased pan or paper lined cup cakes in a oven 350 F for 25-30 minutes.
